Chef Lam has inspired me to share my learning and cooking experiences with my family and we are creating not only great meals but wonderful, fun memories in the kitchen. German is patient and incredibly creative but most importantly very supportive of my personal journey to eat clean.

So how do you fuel your heart, mind and soul with clean eating and healthy cooking?
-I like to use the example of a Ferrari.
-To drive effectively, a Ferrari needs to be fueled with gasoline.
-As a human being, you need to do the same thing by eating food that provides power, growth and speed.
-Your body requires real food (what I call clean food). If you starve your body, it will crash. —However, if you condition your body, by eating clean food, it will get stronger.
-If you eat clean food it will give you focus, discipline, structure and nourishment.
-It is an investment and an opportunity in self improvement and something you can incorporate in your daily living.
-Your body is like a smart phone, if you have the right apps, it will work.
What do I mean by clean eating?
-In clean eating there is purity to the food you are selecting and eating.
-You taste the freshness and you wait to add the condiments.
-You use your senses to enhance the clean/pure food.
-Clean food gives you focus, discipline, structure and nourishment.
So how do you begin?
-You need to create a foundation.
-Focus on breakfast, lunch, dinner and snacks. Consider these sacred times.
-It is not expensive to eat well. When you eat well, you can achieve more.
-Everyone is limited with their time. However, you do need to make time to plan what to buy.
-Planning ahead makes you efficient and effective.
-When you plan ahead — you can shop for the entire week. Remember to incorporate the six food groups.
-At the super market, initially stay on the outside aisles.
-Consider the outside aisles your foundation.
-However, don’t be afraid of the inside aisles.
-The inside aisles add to your foundation. They contribute to the taste of the clean food.
-Everyone is so busy today.
-However, freestyle cooking allows you to improvise and to eat healthy meals even when there is little time to get dinner on the table.
-One example of freestyle cooking is — you go to your kitchen — and you take out of the refrigerator vegetables and protein and wash them, you take grains and rice from a kitchen cabinet.
-You take a big pot filled with water and put in it your vegetables, protein, grains and rice.
-You cook all these ingredients.
-Remember — taste the “clean” food — the freshness of the food before you consider seasoning the pot with condiments.

My family and I have had the good fortune of experiencing his home coaching approach to high-quality, high-enjoyment cooking. As one who is not a natural cook, I was inspired by Chef Lam's ability to engage me in the process. His attitude and teaching skills match the extraordinary quality of his culinary creations. I fully recommend a trial lesson with Chef/coach Lam. You'll never cook or eat the same again!
